Semla (plural - semlor)) is probably one of the most typical Swedish pastries (and princess cake of course) I can think of. It's made out of a wheat flour bun seasoned with cardamom, filled with almond paste and whipped cream. Traditionally they're eaten on "Fat Tuesday" (the last day before the lenten fast) but nowadays you can find them in pretty much any café or bakery in Sweden from new years until easter. I can honestly say I don't know much about their history, but I do know that they're delicious! Some people like to eat them from a bowl of hot milk - this is called "hetvägg" ("hot wall", I know, weird!) but I prefer eating them the way they are.
I also made som untraditional ones - chocolate with Nutella filling. I prefer the regular ones though, but if you feel like making chocolate semlor, just replace 4 tbsp of the flour with cocoa powder and add some cocoa powder to the whipped cream.

Chocolate mascarpone cake with berries
As usual, I have so much more important things to do than making blogposts and recording videos. Therefore, I made two new blogposts and two new videos (because I love making them!). Of course.
I'm a huge procrastinator. I think I need to write more notes.
Anyway, this cake was actually a practice round for an episode of a tv show I'm going to be on. So in about a week or so I will be going to Finland for the first time in my life. Very exciting!

The big brunch post

French toast with blueberries and maple syrup
2 eggs
50 ml milk
50 ml heavy cream
Eight slices white bread/brioche
Sugar
Cinnamon
Butter, for frying pan
To serve:
Blueberries
Powdered sugar
Maple syrup
Whisk together eggs, milk and heavy cream in a wide bowl. Cut each slice of bread into four triangles. Mix sugar and cinnamon on a plate. Heat butter in a frying pan. Quickly dip the pieces of bread in the egg mixture and fry until golden brown. Quickly dip bread in the sugar mixture. Serve with blueberries, powdered sugar and maple syrup.
Blueberry lemon waffles
2 eggs
150 g flour
1/2 tsp baking powder
1 tbsp sugar
Pinch of salt
1/4 tsp vanilla powder
Zest from 1 lemon
200 ml milk
60 g melted butter
50 ml cold water
A handful blueberries
To serve:
Berries
Powdered sugar
Separate egg yolks from whites and put in two different bowls. Mix together flour, baking powder, sugar, salt, vanilla and lemon zest. Add 3/4 of the milk, melted butter and egg yolks and stir until smooth.
Add the rest of the milk and the water.
Whip egg whites until stiff peaks form then carefully fold them into the batter.
Bake in a hot waffle iron (throw in some blueberries in each waffle) for a few minutes or until golden brown. Serve with extra berries and powdered sugar.
Coconut pancakes with chocolate sauce
150 g flour
2 tsp baking powder
1 1/2 tbsp sugar
2 large eggs, lightly beaten
250ml coconut cream
50g butter, melted
1/2 tsp vanilla extract
A pinch of salt
Sift the flour and baking powder into a large bowl. Mix together with sugar, eggs, coconut cream, butter, vanilla and a pinch of salt. Whisk to combine then let stand at room temperature for 20 minutes. Melt som extra butter in a large frying pan. Spoon about 40 ml for each pancake. Cook until bubbles appear on the surface and pancakes are golden brown. Transfer to a plate. Serve with chocolate sauce, coconut flakes, raspberries and chopped pistachios.

1/3 cup/75 g sugar
100 ml strong coffee or water
3 tbsp cocoa powder
1 tsp vanilla extract
Mix all ingredients in a saucepan and let come to a boil. Simmer for 3-5 minutes or until sauce starts to thicken slightly. Let cool.

1 cup frozen blueberries
2 bananas
1/2 cup turkish yoghurt
1/2 cup milk
Ice cubes
Put all ingredients in a blender and mix well!
